The food truck bug has infected Miami – big time. Over the past year dozens of trucks have popped up all over the city, with offerings as unusual as Romanian food down to food truck staples of hot dogs and hamburgers. While food truck dining may not be for everyone, there certainly is a crowd nation-wide that craves the novelty of ordering from a truck. I recently told my grandmother about food trucks and she mentioned something unique to me. Apparently the food truck craze is nothing new, but rather something that the United States was built on. “Chuck-wagons”, as they used to be called, would travel deep into the plains and countryside, serving up simple meals, along with fruits, vegetables and different wares for sale. In those days, the food truck was more of a necessity rather than novelty, but as we all know, what’s old and retro always comes back in style. And Jefe’s Original Fish Taco & Burgers is absolutely no exception.

Modeled after the original Jefe’s Ensenada-style taco shack, which gained huge popularity in Southern California in the mid-1900s, Jefe’s Original Fish Taco & Burgers brings fresh, crisp flavors to the streets of South Florida. Their namesake fish taco features lightly battered flaky fish, authentic pico de gallo, shaved cabbage, a homemade cream sauce and fresh lime. Of several fish tacos that I’ve tried throughout Miami, Jefe’s is hands down the best version yet. The freshness of the ingredients is unbeatable—a huge accomplishment being that Jefe’s competes with several traditional restaurants in this category.

I also tried their carnitas tacos, which are filled with aromatic roasted pork, a zippy salsa verde and chopped onions. I absolutely recommend ordering a combination of both fish and carnitas tacos if you haven’t tried Jefe’s before, both served on warmed yellow corn tortillas. Also try the freshly made salsa picante, or hot sauce, which is made exactly how a good hot sauce should be: big on flavor, not just on heat. It does not have a sharp burn, but rather a small kick with an enormous flavor profile.
